Lebanese Kasabee Imhamatha (Lamb Liver) Recipe


1 lb Lamb liver
1/2 c Water
1 ea Onion – chopped
2 ea Garlic cloves – crushed
3 T Butter
1 c Tomato puree
Pepper, black


Rinse liver thoroughly in cold water.Boil in water about 15 minutes.Rinse again.Chop into small pieces.Melt butter in saucepan – brown onion in butter.Add liver and simmer.Add tomato puree and 1/2 cup water. Add crushed garlic, salt and pepper.Cook about 15 minutes longer.
