Lebanese Jaj Mishwee (Roast Chicken) Recipe


5 lb Chicken
1/4 t Allspice
1 T Salt
1/4 t Salt
1/4 t Cinnamon
1/4 t Pepper, black
1/4 t Nutmeg


Clean chicken and tie legs together. Place in pan and cover with water.Add 1 tablespoon salt. Cover and cook until tender – about 40 minutes.Preheat oven to 350F.Remove chicken and rub cavity with mixture of cinnamon, nutmeg,allspice, salt and pepper. Roast in moderate oven at 350F for 30 minutes,using chicken broth to baste. Chicken will turn a golden brown.
