Lebanese Jaj Mihshee Ma’a Hashwa Roz (Roast Chicken with Rice-Walnut Stuffing) Recipe


5 lb Chicken
1/2 t Salt
1/4 lb Giblets – minced
1/8 t Allspice
3 T Butter
1/8 t Nutmeg
1 c Rice
1/8 t Cinnamon
1/2 c Walnuts – chopped
1/8 t Pepper, black


Clean chicken. Saute giblets in butter. Add rice and stir constantly for 3 minutes. Remove from heat and add walnuts, salt, allspice, nutmeg,cinnamon, pepper. Use mixture to stuff chicken loosely.Truss, tie legs together and place in kettle. Cover with water and simmer until almost tender. Preheat oven to 300F. Remove chicken from kettle and roast in open pan in 325F oven for 1/2 hour or until chicken is tender. During the last 10 minutes of roasting – glaze chicken with butter to turn skin a golden brown.
