Lebanese Habesh (Turkey) Recipe


25 lb Turkey
1/4 t Allspice
2 T Baking soda
1/4 t Salt
1/4 t Cinnamon
1/4 t Pepper, black
1/4 t Nutmeg


Soak turkey overnight in pan of water to which baking soda has been added. The following day rinse thoroughly. Place the turkey in a large kettle and parboil until tender. Remove from turkey broth and dry. Reserve broth.Preheat oven to 250F. Combine spices and rub inside and out of turkey with spice mixture. Place in roasting pan with a small amount of broth.Cover with aluminum foil. Bake in slow oven at 250F 2 to 2-1/2 hours,baste occasionally with broth.When turkey turns golden brown, remove from oven. Prepare a triple recipe of Rice-Giblet Dressing and serve with the turkey.
