Ingredients
* 6 Bunches Parsley — finely chopped
* 2/3 Cup Bulgur
* 1 Quart Water
* 8 Medium Scallions — chopped
* 1/2 Cup Fresh Min — chopped or
* 1/4 Cup Dry Mint
* 4 Large Tomatoes — finely chopped
* 2 Teaspoons Salt
* 1 Teaspoon Pepper
* 2/3 Cup Lemon Juice
* 1/2 Cup Olive Oil
Directions
Soak bulgur in water for 2 minutes.Drain well.Add parsley to bulgur mix,add remaining ingredients.If not serving right away, do not add tomatoes & onions until just before serving.
