Ingredients:
1 c Rice
1/2 c Pine nuts
1 t Salt
2 c Chicken broth
3 T Rendered Butter Recipe
1/2 t Salt
1/2 lb Giblets – chopped
Methods:
Soak rice in warm water with 1 teaspoon salt for 1 hour.Rinse rice thoroughly in water and
drain. Melt butter in pan and add giblets.Saute giblets,add pine nuts,stirring until golden.Add rice, stirring gently for about 2 minutes.Add boiling chicken broth and 1/2 teaspoon salt. Cover pan and cook on low fire for 25 minutes.Use to stuff cavity of 4 pound bird.
