Lebanese Fattoush Recipe

Ingredients :

3 x 6 inch pita breads toasted and broken into small pieces
1/2 cup fresh lemon juice
1 x cucumber peeled seeded and diced
4 x scallions thinly sliced
1 x red bell pepper seeded de ribbed and diced
4 x ripe tomatoes diced
1 cup cooked garbanzo beans (chickpeas)
1/4 cup chopped fresh parsley
6 x fresh mint leaves chopped
2 clv garlic minced
1/2 tsp ground cumin
1/2 cup olive oil
1 x salt and freshly ground pepper to taste

Method :

* In a large bowl moisten pita pieces with 3 tablespoons of lemon juice.
* Add cucumber scallions pepper tomatoes beans parsley and mint.
* Toss again.
* In a small bowl whisk remaining lemon juice garlic cumin and olive oil together. Toss with salad and add salt and pepper.
* A close cousin to panzanella fattoush is a Lebanese dish based on toasted pita bread. As torn bits of pita soak up the juices of diced fresh tomatoes cucumbers and lemon they help bind the ingredients together and transport their flavours. In place of the traditional sumac an astringent middle Eastern spice that is not readily accessible we use cumin for both earthiness and aroma.
