Lebanese Fasoulia w’Riz (Butter Beans with Rice) Recipe


400g chicken meat cubed
3 tins butter beans (400g each rinsed and drained)
1 onion chopped
1 cup fresh chopped coriander
1 tbs. coriander powder
4 cloves of garlic crushed
1 tin crushed tomatoes
3 tbs. tomato puree
2 cups chicken stock
1 tbs. lemon juice
1/4 tsp. chili powder (optional)
1/4 tsp. mixed spices
salt and pepper
2 tbs. oil


Heat the oil in a saucepan, fry the onions till transparent, add garlic, stir then add chilli, spices, coriander powder. Then add the chicken cubes & fry for a few minutes. Add the tomatoes, tomato puree, chicken stock, lemon juice, salt and pepper, boil then lower the heat, cover and simmer for 45 minutes. Add the butter beans and keep cooking for 15 minutes more or till the chicken is well cooked and the sauce thickened. Add the chopped coriander, stir then serve hot with rice.
