Lebanese Awam (Spoon Doughnuts) Recipe


2 md Potatoes
1/2 pk Yeast cake
2 c Flour
Water, lukewarm

1 c Water
1 ea Lemon – juiced
1 c Sugar
Orange-blossom water


Peel potatoes, cube and boil. Remove from water and mash. Add flour,yeast and water. Knead, leaving mixture soft. Set until dough rises, about 1 hour. Pick up small portions of dough with spoon and drop in skillet of hot oil until browned. Remove and dip in cold syrup.

Syrup – combine water, sugar, lemon juice and optional orange-blossom
water. Bring to a boil, allow to cool, chill in refrigerator.
