Ingredients:
- 1 lb sugar
- 1 cup water
- juice of 1 lemon
- 6 cloves
- 2.25 lbs peeled and deseeded pumpkin, cubed
Boil sugar and water until sugar has dissolved, stirring continuously, about 3 minutes. Reduce heat and stir in juice and cloves. Add pumpkin to pan and bring to a boil. Reduce heat and put lid on pan, poaching pumpkin gently for about 1 hour. Let cool in pan then serve.
