2 ea Onions – quartered
1 ea Apple – quartered
Singe, wash and clean goose. Stuff cavity with the apple and onions.Prick with a fork through the fat layers of the goose. This will help to draw out the fat. Place in shallow pan in moderate oven 375F for 15-20 minutes or until fat starts to run.Remove from oven and pour off fat.
Repeat this two or three times until at ceases to drip. The bird is well cooked when thick portion of drumstick meat is soft. Allow 30 minutes per pound. Do not add water and do not baste. Discard apples and onions after roasting.
