* 1 Medium Onion — chopped
* 1 Clove Garlic — chopped
* Salt And Pepper — to taste
* 4 Medium Tomatoes — chopped

* 3 Cups Hot Beef Broth
* 2 Cups Escarole — shredded
* 1 Cup Semi Di Melone
* 1 Lemon Lemon Juice
* 1 Tablespoon Fresh Mint — chopped
Directions
Saute onion and garlic in butter and oil.Season with salt and pepper and saute until soft.Stir in tomatoes and simmer for 5 minutes.Add water, broth and escarole.Simmer for 20 minutes. Stir in pasta and cook for 5 minutes or until al dente add lemon juice and mint leaves.Simmer for 1 minutes and serve.
