- 1 small cucumber, finely diced
- 8 oz feta cheese, rinsed and drained
- 2 tbs olive oil
- juice of 1 lemon
- 2 scallions, finely chopped
- salt and pepper
- 1 small bunch each fresh dill and mint, finely chopped
Sprinkle cucumber with salt and let sit for 15 minutes. Squeeze excess water out with your hands and place on paper towels.
Mash the cheese with a fork and beat in oil and lemon juice with a wooden spoon. Add scallion and cucmber and season with salt and pepper. Fold in herbds and serve.
