1 lb Sheep kidneys
2 T Flour
1 t Parsley – chopped
1 ea Onion – chopped
Pepper, black
3 T Butter
Bread crumbs
1 T Worcestershire sauce
Sharp Cheese


Split the kidneys in half – removing outer skin and sinews. Mince fine. Melt butter in pan, add parsley and onion. Fry for a few minutes add Worcestershire sauce. Sprinkle with flour and cook 2 minutes. Stir to blend in the flour.Add kidneys, salt and pepper. Butter thin slices of toast, cover them with the minced kidney mixture and sprinkle with a thick layer ofbread crumbs mixed with a small amount of sharp cheese.
