Methods:
Clean and dry the pheasant thoroughly. Rub cavity with salt, pepper and cinnamon mixture. Bake uncovered in 400F oven for 20 minutes. Place several layers of cheese cloth soaked in vegetable oil on breast of pheasant. Cover and bake in 250F oven for 2 hours. Serve with Rice-Giblet Dressing.
